Spaghetti Squash Boats with Feta, Tomato & Garlic

Roasted spaghetti squash, softened tomatoes, feta, garlic, and herbs — all served right in the squash shell. It looks a little impressive without actually being complicated.
What You Need
Ingredients
1 medium spaghetti squash
1–2 teaspoons olive oil
Salt and black pepper
1–2 cups cherry or grape tomatoes, halved
2–3 cloves garlic, minced
½–¾ cup crumbled feta cheese
Fresh basil, parsley, or Italian seasoning
Optional Add-Ins
Spinach
Mushrooms
Chickpeas or white beans
Shredded chicken
Turkey or chicken sausage
Tofu
How to Make It
1. Roast the Squash
Preheat the oven to 400°F. Carefully cut the spaghetti squash in half lengthwise and scoop out the seeds. Brush the cut sides lightly with olive oil and season with salt and pepper. Place the squash cut-side down on a baking sheet and roast for about 35 to 50 minutes.
Start checking around 35 minutes. The squash is ready when a fork easily separates the flesh into tender strands.
2. Cook the Tomatoes and Garlic
While the squash cooks, heat a small amount of olive oil in a skillet over medium heat. Add the tomatoes and cook for a few minutes until they begin to soften. Add the garlic near the end and cook just until fragrant.
3. Fill the Squash
Let the squash cool enough to handle. Use a fork to loosen the flesh into strands while leaving the shells intact. Mix in the tomato and garlic mixture and most of the feta.
4. Warm and Finish
Return the filled squash halves to the oven for about 5 to 10 minutes, or until everything is warmed through. Finish with the remaining feta and fresh herbs.
Calm Kitchen Skill: Let the Squash Tell You
Cooking times are useful, but food does not always follow the clock. A smaller spaghetti squash may be ready sooner. A larger one may need longer.
Instead of relying only on the timer, use a fork. If the flesh separates easily into tender strands, it is ready. If it still feels firm or crunchy, give it more time.
Use the clock to know when to start checking. Use the food to decide when it is done.

Try goat cheese, Parmesan, or mozzarella. They will taste different, but each adds richness and flavor.

Spaghetti squash is one of those ingredients where the recipe time is really just a starting point. Use the clock to know when to start checking. Use the food to decide when it is done.
Save the Seeds
Don't automatically throw the seeds away. Clean them, dry them well, season them, and roast them just as you would pumpkin seeds. One squash, two uses.
Storage
Store leftovers in a covered container in the refrigerator. Reheat in the microwave, skillet, or oven until hot. For the best texture, store leftover filling separately from the squash shell rather than keeping everything assembled.
Make It Your Own
Once you understand the basic combination — roasted squash, something savory, something bright, and cheese or another flavorful topping — you can change it based on what you have. That is the point. The recipe gives you a place to start. The kitchen does not have to look exactly the same every time.
