Quinoa Caprese Bake with Ground Turkey

Caprese Turkey Quinoa Casserole fresh from the oven

Quinoa, ground turkey, spinach, tomatoes, and fresh basil come together in an easy baked dinner finished with just enough mozzarella to give you that Caprese flavor — and a good cheese pull.

Ingredients


  • 1 cup dry quinoa, rinsed

  • 2 cups water or low-sodium broth (for cooking the quinoa)

  • 1 lb lean ground turkey

  • 1 small onion, diced

  • 4–5 cloves garlic, minced

  • 5 oz fresh baby spinach

  • ¼ cup fresh basil, chopped, plus extra for serving

  • 1–1½ cups shredded mozzarella cheese

  • 3 medium tomatoes, diced

  • ½ cup low-sodium chicken or vegetable broth

  • 1 tablespoon olive oil, if needed

  • ½ teaspoon salt, or to taste

  • Black pepper, to taste



Directions


  1. Cook the quinoa

    Rinse the quinoa and cook with 2 cups of water or broth according to package directions. Fluff with a fork and set aside.

  2. Cook the turkey

    Heat a large skillet over medium heat. Add olive oil if needed and sauté the onion for 2–3 minutes. Add the ground turkey and cook until completely cooked through. Season with salt and pepper.

  3. Build the base

    Preheat the oven to 375°F and lightly coat a 9×13-inch baking dish with cooking spray. Combine the cooked quinoa with the turkey and onion, then spread evenly in the dish.

  4. Add the greens and flavor

    Layer the spinach over the quinoa mixture. Sprinkle the garlic and fresh basil over the spinach.

  5. Add the Caprese layer

    Top with mozzarella and diced tomatoes. Pour ½ cup of broth evenly over the casserole.

  6. Bake

    Bake uncovered for 20–25 minutes, until heated through, the spinach has wilted, and the mozzarella is melted.

  7. Serve

    Let the casserole rest for about 5 minutes. Finish with additional fresh basil if desired.
