Chickpea Box Mac and Cheese Upgrade
Updated: Sep 13

Boxed mac and cheese is allowed to just be easy. You do not have to turn it into an entirely different meal. But if you want to make it a little more substantial, adding tofu and extra cheese is a straightforward way to get there.
What You Need
1 box chickpea mac and cheese
Cheese packet from the box
¼ cup unsweetened soy milk, or enough to make the sauce creamy
½ block firm or extra-firm tofu, diced small
½ cup shredded cheddar or Colby Jack cheese
Salt and black pepper, to taste
Optional Add-Ins
Frozen peas
Spinach
Broccoli
Hot sauce
Garlic powder
Smoked paprika
How to Make It
1. Cook the Pasta
Cook the chickpea pasta according to the package directions. Chickpea pasta can soften quickly, so start checking it near the lower end of the cooking time. Drain and return it to the pot.
2. Make the Sauce
Turn the heat to low. Add the cheese packet and enough soy milk to make the sauce smooth and creamy. Stir until combined.
3. Add the Tofu
Add the diced tofu and gently stir it through the pasta. Keep the heat low and give it a few minutes to warm through.
4. Add More Cheese
Stir in the shredded cheese until melted. Taste before adding extra salt because the boxed cheese mixture may already be salty. Add black pepper or any other seasoning you like. Serve warm.
Calm Kitchen Skill: Start With Convenient Food
Convenience food does not need to be replaced before it can become useful. Sometimes you can simply start with what already makes dinner easier and add something to it.
Boxed mac and cheese can become:
mac and cheese + tofu
mac and cheese + peas
mac and cheese + broccoli
mac and cheese + chicken
mac and cheese + beans
Same starting point. Different dinner.
Jillian's Kitchen Note
I like chickpea pasta here because it changes the texture and gives you another option besides traditional pasta. But you do not have to use chickpea pasta. Regular boxed mac and cheese works too.
This is not about creating the nutritionally perfect bowl of macaroni. It is about knowing how to take an easy food and make it fit the meal you want.
Easy Swaps
No tofu?
White beans
Chickpeas
Shredded chicken
Turkey or chicken sausage
Peas
No soy milk?
Dairy milk
Another unsweetened milk
A little pasta water if that is all you have
Different choices will change the final texture and flavor.
Want Vegetables?
Add frozen vegetables during the last few minutes of the pasta cooking time. Peas, broccoli, or spinach are especially easy because they require almost no extra preparation.
A Note About Chickpea Pasta
Chickpea pasta cooks a little differently from traditional pasta. It can go from firm to soft quickly, and some brands foam more while boiling. Use the package time as a guide and taste it before draining. That small check makes a bigger difference than trying to memorize the "perfect" cook time.
Storage
Store leftovers in a covered container in the refrigerator. When reheating, add a small splash of milk or water and stir. That helps loosen the sauce after it has thickened in the refrigerator.
Make It Your Own
The useful part of this recipe is not the exact ingredient list. It is the idea:
Start with something easy. Add what makes sense. Stop when dinner is done.
Some nights that means tofu and vegetables. Some nights it means boxed mac and cheese exactly as it came. Both are still dinner.

MAKE IT FIT YOUR DAY
The same meal can look different depending on how much time and energy you have.
GREEN DAY — BUILD IT OUT
Make the boxed mac and cheese, add chickpeas plus a vegetable or another protein, and season it to make the meal your own.
YELLOW DAY — USE THE EASY UPGRADE
Make the boxed mac and cheese and stir in chickpeas or one easy vegetable. One addition is enough.
RED DAY — KEEP DINNER SIMPLE
Make the boxed mac and cheese as directed. Add a ready-to-use protein only if it feels easy today.
The goal is not to make the hardest version every time. The goal is to use the version that fits the day you are actually having.
