Yellow Day Chicken Grain Bowl Made Easy
This is exactly what a Yellow Day meal can look like.
Start with something that already did most of the work. Add a few things. Eat dinner.
What You Need
1 package microwave quinoa, rice, or quinoa-chickpea-vegetable blend
1 cup cooked chicken, chopped
½–1 cup chickpeas, drained and rinsed
1–2 cups vegetables, fresh, frozen, or leftover
Olive oil, dressing, salsa, or another sauce you already have
Optional:
Avocado
Feta
Shredded cheese
Fresh herbs
Lemon or lime
How to Make It
1. Heat the Grain Base
Prepare the microwave grain or grain-and-vegetable blend according to the package directions.
2. Add More If You Want It
Stir in extra chickpeas and vegetables. Use whatever is easiest:
Microwave frozen vegetables
Leftover roasted vegetables
Bagged spinach
Chopped cucumber
Tomatoes
3. Add the Chicken
Top with cooked chicken. Heat everything together if needed.
4. Finish
Add a dressing, sauce, lemon, lime, salsa, or whatever you already have.
Greek Yogurt Cilantro-Lemon Dressing
Ingredients
½ cup plain Greek yogurt
1–2 cups fresh cilantro, packed
3 tablespoons fresh lemon juice
¼ cup olive oil
1 garlic clove, minced
1 teaspoon honey
½ teaspoon kosher salt, plus more to taste
Black pepper to taste
How to Make It
Add cilantro, Greek yogurt, lemon juice, garlic, honey, salt, and pepper to a blender or food processor.
Pulse until the cilantro is finely chopped and the mixture starts to come together.
With the motor running, slowly drizzle in the olive oil until smooth and creamy.
Taste and adjust with more lemon juice, salt, or a splash of water to thin it out.
Keeps in the fridge for up to 5 days in a sealed jar.
Calm Kitchen Skill: Start With the Part That Is Already Done
A Yellow Day is not the day to prove how much work you can create for yourself.
Microwave grains are already cooked.
Cooked chicken is already cooked.
Canned chickpeas are already cooked.
Frozen vegetables are already washed and cut.
Use that. Then put the pieces together.

This is not a "Yellow food." It is a meal I might choose on a Yellow Day because the effort is lower. Another day, the exact same bowl could be Green or Red depending on how I make it.
That is the point.
