Greek Yogurt Cilantro Lemon Dressing That Works on Everything

Greek Yogurt Cilantro-Lemon Dressing
Creamy, bright, garlicky, and useful on far more than salad.
What You Need
1 cup plain Greek yogurt
½ cup fresh cilantro
1 small garlic clove
Juice of 1 lemon
1 tablespoon olive oil
1–3 tablespoons water, as needed
Salt and black pepper, to taste
How to Make It
Add the Greek yogurt, cilantro, garlic, lemon juice, olive oil, salt, and pepper to a blender or food processor.
Blend until smooth.
Add water one tablespoon at a time until the dressing reaches the consistency you want.
Taste. Add more lemon or salt if needed.

Start thick. You can always add water. You cannot easily remove it.
Blend the main ingredients first, then thin the dressing a tablespoon at a time until it works for what you are making.
Thicker — dip or sandwich spread
Thinner — dressing or drizzle
